Is there a way to set a default photo, not for EVERY project, but for the different types of projects you have in your contact form?
So like if someone clicks they are inquiring about a wedding, a wedding images is the default. Or if someone is inquiring about a senior session, an image from a senior session pops up.

Unfortunately, currently there is no way to set a default photo per project type, only for all projects.
But this is a great idea, and If you have the time you could add a feature request for the product team to track, and have others vote for it.
