If you have been a sole proprietorship and you want to get an LLC, can you back date the LLC start date to the date you started the business?

No, normally, the LLC start/effective date is the date your LLC goes into existence, the date when the formation documents are filed with the state, making it your effective date. For tax purposes, a single member LLC and a sole proprietor file exactly the same way and the same tax implications apply to both.
